Fermented in stainless steel tanks in a controlled environment at gradually increasing temperatures.
Aged for 12 months in 500lt French oak barrels and then for another year in the bottle at constant temperatures.
Tasting Notes:
Mid golden in colour. A robust Assyrtiko featuring a bouquet of dried stone and tropical fruit with notes of nutmeg, vanilla, honey and roasted nuts.
Concentrated in the mouth with great complexity and a long, lingering finish.
Best enjoyed at 12°C
Ageing Potential: Over 10 years
